Ingredients:

4 Russet potatoes
2 tbsp olive oil
2 garlic cloves, minced
½ tsp dried rosemary
1 tsp dried thyme
Salt & pepper to taste
Fresh parsley (optional)

Instructions:

Preheat oven to 400°F (200°C) and line a sheet pan.
Prep potatoes: Scrub clean, dry, and score thin cuts across the top (don’t slice all the way through).
Mix seasoning: Combine oil, garlic, herbs, salt, and pepper.
Season: Brush mixture over potatoes, making sure it gets into the cuts. Save a little for later.
Bake: Roast for 45–50 minutes, brushing again halfway through. Potatoes should be crispy outside, soft inside.
Garnish & serve: Add parsley or toppings like cheese or sour cream, and enjoy hot.
